Through this class I hope to introduce the pleasure of Japanese home cooking to you, as it was introduced to me, directly from my mother and grandmother. Each day, my mother would prepare me a beautiful bento to take to school, a gift of art in each box. My grandmother would cook for the whole extended family. She would show me the traditional techniques, and didn’t hesitate to allow me to use a large knife or hot pan. In Japanese food, colour and presentation share equal importance with flavour, texture and nutrition. The quality and freshness of ingredients is therefore vital.


In Japan I studied “shojin-ryori” (Buddhist cuisine) from a Zen Buddhist priest. Essentially this is vegetarian and incredibly tasty. Although I am no longer vegetarian, I am greatly inspired by these techniques. Each vegetable has an optimum way it should be prepared to retain it’s flavour, colour and texture. Food should be delicious as well as healthy. My motto is, that even if you are eating nutritious food, if you are not enjoying it, then it means nothing,


Secondly I studied under Funakoshi sensei, a published biodynamic and macrobiotic chef in Japan. Subsequent to this training I taught a macrobiotic cooking class in Japan with the focus being on how we can prepare macrobiotic food for children. I am sure that you will find it inspiring and easy to introduce these recipes and techniques to your families. As a result, perhaps mealtimes may become exciting as well as healthy.
